Cairdeas Casserole ‘Healthy Ireland’!

The Healthy Ireland campaign is about encouraging people to get active, eat well and mind their mental wellbeing. At Cairdeas we, the members, have been involved in many initiatives including: introducing a healthier approach in the Catering Unit which also caters for people with food allergies. “Fresh” fruit and vegetables are fully used from our Garden Plot in Bray in which members are extremely active in cultivating. With the introduction of our new Polytunnel, even more work is underway!! Thanks to KWETB who are funding us in our exciting new project in the garden. Polytunnels gives the home gardener the pleasure of growing their own vegetables and flowers in a controlled environment. Cairdeas has also introduced calorie counting to add to our weekly menu!

Cairdeas Vegetarian Casserole

This veggie-packed dish serves up to ten-fifteen people and is filled with the best of what’s in season right now: aubergines, courgettes, corn, carrots and tomatoes. A secret ingredient — Lentils-  which are packed with protein —without the use of heavy cream or flour so any of our members who maybe wheat or dairy intolerant can enjoy. And Lentils are high in protein, so it helps fill you up and keep you satisfied.

 

Ingredients

  1. Tablespoon of olive oil
  2. 1 Onion, finely chopped
  3. 3 garlic cloves, sliced
  4. 1 tablespoon smoked paprika
  5. ½ tablespoon of cumin
  6. 1 tablespoon dried thyme
  7. 3 Medium Carrotts
  8. 2 Medium sticks of celery, finely chopped
  9. 1 Yellow Pepper, chopped
  10. 1 red pepper, chopped
  11. 2 x 400g tins tomatoes
  12. 250ml vegetable stock cube
  13. 2 Aubergines, sliced
  14. 2 Sprigs of fresh thyme
  15. 250g Lentils

Method

  1. Heat the oil in a large, heavy-based pan. Add the onions and cook gently for 5 – 10 mins until softened.
  2. Add the garlic, spices, dried thyme, carrots, celery and peppers and cook for 5 minutes.
  3. Add the tomatoes, stock, courgettes and fresh thyme and cook for 20 – 25 minutes.
  4. Take out the thyme sprigs. Stir in the lentils and bring back to a simmer. Serve with wild and white rice, mash or quinoa.

Today our Garden Casserole was a huge success for the members who worked in Catering but also for everyone who were involved in the work ordered day.
